La primera investigación de patrones alimenticios en Costa Rica con muestra significativa determinó que la dieta tradicional costarricense, que estamos perdiendo frente a comida importada poco saludable y dietas importadas de moda, es la que nos acerca más a una vida saludable.

El casado y el gallo pinto no solo son comidas más baratas que las dietas nutricionales de moda y los superalimentos, sino que también aleja más a la población costarricense de contraer enfermedades crónicas, reveló una investigación de la Escuela de Nutrición de la Universidad de Costa Rica (UCR).

“Lo que podemos intuir de los resultados es que nuestro cuerpo y nuestra genética responde positivamente a la alimentación tradicional porque se adapta mejor a nuestro estilo de vida y a la cantidad de energía que requiere nuestra actividad diaria. No es necesario irse del país a buscar una dieta que sea buena para nuestra salud”, comentó la investigadora y nutricionista María Fernanda Pizarro.

Pizarro calificó los resultados como “sorprendentes”, ya que investigaciones internacionales suelen relacionar otros tipos de dietas más supervisadas, como las clásicas ensaladas verdes, con una vida más saludable, pero su investigación determinó que no es así para la población costarricense.

“No es necesario irse del país a buscar una dieta que sea buena para nuestra salud”, María Fernanda Pizarro, nutricionista.

“A nivel teórico, hubiéramos esperado encontrar que lo que llamamos en el estudio como ‘dieta prudente’ fuera la más saludable, es decir, la más protectora del exceso de peso medido por los indicadores, pero los resultados no fueron estadísticamente significativos, mientras que la tradicional sí arroja resultados positivos. Sin embargo, se puede considerar una dieta prudente como un buen complemento de la tradicional”, indicó.

En total, la investigación determinó el impacto de seis patrones de consumo alimenticio con datos de población urbana de Costa Rica del Estudio Latinoamericano de Nutrición y Salud (ELANS) en dos indicadores confiables sobre el estado de salud: la circunferencia de cuello y de cintura.

“Las personas que se adhieren a una dieta tradicional tienen una menor circunferencia de cintura. Esta es una medida muy confiable para conocer el estado de salud de una persona porque los estudios han determinado que entre mayor acumulación de grasa a nivel abdominal hay más problemas a nivel de enfermedades crónicas como diabetes, hipertensión y enfermedades a nivel cardiovascular”, explicó Pizarro.

Estos resultados pueden ser claves para enfrentar la creciente presencia de comidas poco o nada saludables en el país, así como las enfermedades con las que se asocian, como la comida chatarra, también identificada por la investigación como un patrón de alimentación costarricense.\

Las enfermedades crónicas no transmisibles como la diabetes, la hipertensión y, principalmente, las enfermedades cardiovasculares son la principal causa de muerte en el país desde hace tres décadas y, en conjunto, son la razón del 80% de las muertes del 2019, según datos del Ministerio de Salud.

El sobrepeso y la obesidad son altos factores de riesgo de estas enfermedades y Costa Rica es el país de Centroamérica con mayor incidencia (60%) con tendencia al alza, según la Encuesta Nacional de Nutrición, y una preocupante presencia entre las personas menores de edad: tres de cada diez niños y niñas de 6 a 12 años lo tienen.

El pasado 24 de mayo, la ministra de Salud, Mary Munive, afirmó que controlar el sobrepeso y la enfermedad en Costa Rica “quita el 60% de

enfermedades existentes”. Esto lo dijo durante la presentación de la nueva “Política Nacional de Salud 2023-2033” que aseguró se enfocaría en la prevención y Pizarro considera que su investigación podría orientar las iniciativas de esta cartera.

“El estudio da mucho valor a los esfuerzos por recuperar la dieta tradicional que se ha perdido con la globalización y sería de gran valor que se realizaran como parte de, por ejemplo, las políticas del Ministerio de Salud” comentó.

 Patrones alimenticios

¿Cómo se diferencian las dietas costarricenses? La comida tradicional tiene un aporte importante de proteína (carnes, huevo) que ayudan al funcionamiento general del cuerpo, de fibra gracias a las leguminosas (frijoles, garbanzos, lentejas) y no excluye una porción de carbohidrato (arroz).

“Lo que conocemos como la comida tradicional costarricense es la que se relaciona con una vida saludable, es decir, que comer un casado en el almuerzo puede proteger nuestra salud”, indicó Pizarro.

Este es un patrón alimenticio más común entre hombres y “tendió a ser más consumido conforme a menor rango de edad”. También, al ser una alimentación más accesible económicamente, está más presente en población con menor ingreso, indica el estudio.

Un patrón alimenticio preocupante es el que la investigación llama “dieta occidental”, el cual se conforma por comidas rápidas importadas de Estados Unidos y de consumo frecuente entre la población joven y adulta joven que son altas en grasas saturadas,  relacionadas con efectos perjudiciales para la salud.

Por otro lado, el estudio llama “dieta prudente” a una alimentación más supervisada —ya sea de forma personal o por un profesional en nutrición— en la que son frecuentes las ensaladas o superalimentos.

Esta dieta es comúnmente considerada la más saludable y es muy variada en su composición con nueces, frutas, verduras no harinosas, es decir que suele excluir alimentos como la papa o el camote. Es rica en vitaminas y minerales y tiene poco valor calórico.

Pizarro indicó que la dieta prudente también suele ser importada de, por ejemplo, Europa, y son más comunes entre personas de mayor ingreso económico, por ser más costosas.

Otra comida que suele frecuentar por la población costarricense es el tiempo de café, que se acompaña de cereales en forma de pan o tortilla, así como el azúcar. Esta comida, así como la “dieta prudente” es más popular entre personas adultas de 35 a 65 años.

Finalmente, las sopas con verduras se identificaron como un patrón alimenticio con mayor presencia entre las mujeres y, una última categoría llamada “preparaciones de cereales con carne”, que contempla comidas como la lasaña, no se relaciona de forma significativa con ningún grupo.
